Refrigeration technology for a large cheese factory in the Bernese Oberland

Swiss cheese is not just very popular among us in Switzerland, but has long been an export hit. For example, Aaremilch AG produces most of its cheese for foreign consumers at its new location Burgholz in Diemtigtal. Thirty million kilograms of milk from producers from throughout the Bernese Oberland are processed into cheese in the cheese factory, which is located in Ansmatte next to Burgholz at the entrance to Diemtigtal. Bouygues Energies & Services was able to contribute its expertise in refrigeration technology in the fields of cheese production and storage.

The Diemtigtal nature reserve cheese factory project is unique in the Bernese Oberland region and an ideal reference for us in the field of refrigeration technology. We were there from A to Z: sale, planning, installation, commissioning and transfer of the refrigeration technology.

The refrigeration professionals of Bouygues Energies & Services installed the refrigeration technology within a few months: the work began in spring 2019 and had already been completed in September 2019. What was done exactly? The refrigeration technology team of the Bern region planned and installed all of the refrigeration system components for cooled cheese storage: this involved cold-storage rooms in which the cheese rounds are stored in vacuum packs. The refrigeration occurs with carbon dioxide as a natural refrigerant. Furthermore, Bouygues Energies & Services was responsible for the beverage and food refrigeration installations in the brand store and for the air-conditioned cheese storage in the cheese humidor of the Simmental cheese world. The latter provides the public with an exclusive insight into the cheese storage of the nature reserve cheese factory. Consequently, visiting Diemtigtal is worthwhile for everyone – for lovers of nature and cheese equally.
